Quinoa Porridge

Ingredients –

  • ½ cup cooked white quinoa
  • 1 cup milk
  • ¼ tsp cinnamon powder
  • 1 small banana
  • 10 raisins
  • 5 almonds
  • Sugar to taste

How to Prepare:

It is a very simple quinoa recipe full of goodness. Add quinoa to milk and boil this mixture. Add raisins, chopped almonds, and sugar. Keep it on low flame for 5 minutes. Remove this mixture from the flame and add chopped banana and cinnamon powder.

Quinoa-and-Coconut-Pancakes

Quinoa and Coconut Pancakes

Ingredients –

  • ½ cup cooked white quinoa
  • 1 cup coconut milk
  • 2 tsp desiccated coconut
  • 2 tsp bran (or tapioca flour)
  • Sugar to taste
  • ¼ tsp nutmeg powder
  • ¼ cup canned or fresh pineapple
  • Fresh cream (optional)
  • Coconut oil (any other of your choice) as needed

How to Prepare:

Mix all the ingredients together except pineapple, cream, and oil. Heat a pan with coconut oil. Pour the batter in batches and cook it thoroughly on each side. Top each pancake with pineapple right before serving. Add cream on top for some richness.

Ingredients –

  • ¼ cup cooked red or white quinoa
  • 2 slices whole grain bread
  • 3 tsp olive oil
  • ¼ green capsicum, thinly-sliced
  • 2 slices of tomato
  • ¼ cup grated cheese of your choice
  • ¼ tsp black pepper powder
  • Salt to taste

How to Prepare:

Mix quinoa with capsicum, salt, pepper, cheese and 1 tsp olive oil. Now, place bread slices in a skillet or pan. Dab each side with olive oil and let the bread crisp for a minute or so. Spoon the sandwich mix on one slice and add tomato slices. Now cover it with the remaining slice. Remove from heat and serve the dish.

Quinoa-and-Egg-Scramble

Ingredients –

  • ½ cup cooked white quinoa
  • 1 egg
  • 1 small onion, finely chopped
  • ½ cup capsicum
  • ¼ cup broccoli, finely chopped
  • ¼ cup grated cheese
  • ¼ tsp black pepper powder
  • ¼ tsp fresh ginger, julienned
  • 2 tsp olive oil
  • Fresh herbs like parsley, thyme or cilantro (optional)
  • Salt to taste

How to Prepare:

Heat the oil in a pan, add ginger and vegetables and cook them for 2-3 minutes. Break an egg in the pan and cook it on a low flame cook it until done. Add quinoa, cheese, pepper powder, and salt. Remove from heat and add fresh herbs if you like.

Ingredients –

  • 1 cup cooked white quinoa
  • 1 cup wheat flour
  • ¼ cup palm sugar
  • 2 tsp coconut oil
  • Nuts, finely-chopped

How to Prepare:

Add water to bind the ingredients together. Form into balls and bake for 10 minutes at 350 degrees F. This dish is ready to serve.
