5 Healthy and Delicious Recipes with Celery
You can extract celery juice and use it in many recipes. There are many benefits of celery juice as it is full of enzymes and antioxidants. So, it makes sense to use it regularly for family meals.
Here are five recipes that you can make from celery juice or stalk.
Celery Soup
Ingredients –
- 1 cup celery, chopped
- 1 cup celery root juice
- 1 cup store-bought vegetable stock
- 2 chopped shallots
- ¼ chopped carrots
- 2 tbsp chopped cilantro
- ¼ tbsp pepper powder
- 1 tbsp olive oil
- Salt to taste
(Serves 1)
To prepare juice of celery root, clean the root and chop off stems and root top. Shave and slice it and put it in the blender with some water and then strain it. In a pan, add olive oil and cook shallots for 2 minutes. Add vegetable stock with carrots and celery and let it cook for 3 minutes. Add juice of celery root and the rest of the ingredients. You can serve it hot or cold.

Celery Sticks with Potatoes
Ingredients –
- 2 celery sticks
- 2 medium-sized potatoes
- 1 green chili, chopped
- ¼ cup cheddar cheese, grated
- 1 tbsp ginger, grated
- ½ cup plain yogurt
- ½ tbsp ground pepper
- ¼ tbsp paprika
- ½ tsp chopped cilantro
- Salt to taste

Wash, peel and boil potatoes. Mesh them in a bowl, and mix it with rest of the ingredients except celery and refrigerator for 10 minutes. Clean celery stick and cut them into 4 inches pieces. Spoon potato mixture onto celery pieces and serve.
Celery and Oat Pancakes
Ingredients –
- 1 cup celery juice
- ½ cup oats
- ¼ cup bran
- 1 egg
- 1 small carrot, thinly-sliced
- 1 small celery stick, chopped
- 2 tsp chopped chives
- 1 chopped green chili
- 4 tbsp olive oil
- 1 cup plain yogurt
- 1 tbsp chopped cilantro
- Salt to taste

You may think celery juice recipe is a hassle and put off making this savory pancake. But it is very simple to make celery juice with either a blender or juicer. Simply add celery stalk with leaves and a bit of water as needed in the blender. Blend at high speed and then strain the celery extract. If you use juicer, you may not need to add water.
For the pancakes, cook oats in celery juice for 2 minutes over low flame. Next, add bran and cook for another 2 minutes. In a separate bowl, break the egg and whisk it with rest of the ingredients except yogurt and cilantro. Add cooked oats into the egg mixture. Let it cool for 2-3 minutes. Heat a pan, add oil and spread the mixture in small round shapes. Cook each side for 2-3 minutes until golden. Whisk yogurt with salt and cilantro into a smooth consistency. Spread it over your pancakes before serving.
Celery and Cucumber Salad with Beans
Ingredients –
- 1 celery stalk
- 1 small cucumber, peeled and diced
- 1 cup kidney beans, steamed
½ cup plain yogurt - 1 tsp lemon juice
- 1 tbsp chopped chives
- Salt to taste
(Serves 1)
Clean the celery and chop the stick and leaves. Put them in a salad bowl. Add the rest of the ingredients and refrigerator for 10 minutes.

Celery and Avocado Dip
Ingredients –
2 celery sticks
1 ripe avocado
2 tsp lemon juice
1 green chili chopped
Salt to taste
(Serves 1)
Peel and mash avocado. Add 2-inches of finely-chopped celery stick and other ingredients in it. Scoop it out with rest of celery stick when you are ready to eat.
