How to prepare:
In a big bowl, chop and mix all the vegetables. Mix the salad dressing ingredients until smooth, then pour over the veggies and mix thoroughly. Serve immediately.
Overnight soaked oats
Ingredients required:
- 1 cup oats
- I cup milk of choice
- 2 tbsp honey
- A pinch of cinnamon
- A pinch of salt
- 1 – 2 tbsp grated coconut
- 1 – 2 chopped walnuts
- A few pieces of dried dates
- Other dry fruits of choice for toppings
How to prepare:
Mix everything in a jar with a lid. After mixing, place it in the fridge and leave it overnight. In the morning, check the consistency and add a little milk if desired. Top it with fresh fruit and nuts. Serve cold.
Sweet Potato Soup
Ingredients required:
- 2 sweet potatoes roasted, peeled and chopped
- 2 boiled carrots, chopped
- I pod of garlic crushed
- I onion finely chopped
- 1/4th tbsp. ginger crushed
- Pinch of chilli powder
- Pinch of salt
- Pinch of roasted cumin powder
How to prepare:
Take a little butter in a pan and sauté onion until translucent. Add ginger and garlic and sauté on low flame. Add all the spices and mix well. Now add chopped sweet potatoes and carrots. Cook them and mix them well so that all the spices are blended. Blend the mixture to a fine puree. Add vegetable stock and bring it to boil. Garnish with cream.
Mango- Rhubarb Smoothie
Ingredients required:
- 1 ripe mango, peeled, pitted and diced
- 1 ½ cup diced rhubarb
- ½ cashews, soaked in water overnight and drained (prior
- soaking is optional)
- 1 cup soy milk
- ½ cup water
- Few drops of lime juice
- 1-2 drops of pure vanilla extract
How to prepare:
Blend all the items together until smooth. If you find the mix too thick add more soy milk. Garnish with mint leaves and thinly sliced rhubarb. Serve immediately.
Garlic sautéed kale
Ingredients required:
- 1 pod full of garlic
- Half red onion, sliced
- 1 bunch of kale
- Vinegar
- Pinch of salt
- Olive oil few drops
How to prepare:
Wash kale and remove its stems. Coarsely chop the garlic and set it aside. Now in a pan put a few drops of olive oil. Sauté chopped onions and garlic until golden brown. Now add coarsely crushed kale, a pinch of salt and few drops of vinegar. Add herbs if required. Mix well.
